Gothic Realms has by far the best dungeon walls textures, simply beautiful. It also has sewers in 4 colors and traps that make fantastic additions to any dungeon.
Its also a great starter set for new builder. Incredibly quick and simple to build the flat walls also store in a minimum of space. That is an important feature to a serious builder.
In my opinion clip-it walls are the only way to go for those who want a large elaborate dungeon.
There are some drawbacks to the clip it system tough. The walls attach to each other using paper clips or bobby pins. While this is quick and easy, it does not add anything to the look. Also since the walls are flat they lack a base, which allows they to slide around. But I've found that easily stopped by using removable poster tack. Its strong enough to hold the walls on upside down, and I can remove it without leaving any marks, and its reusable.
